This is the gluten-free version of the Guthrie Oatmeal Raisin Cookie.
This oatmeal raisin cookie is my attempt to honor Guthrie as the original capital, or O.C.It’s a fairly simple and classic recipe that includes old fashioned oats, butter, cinnamon, and plenty of raisins. The cookie is crispy on the outside, but chewy on the inside. You can’t get more classic than an old fashioned oatmeal raisin cookie!
Guthrie, Oklahoma serves as the county seat of Logan County, located in the center of the state, north of OKC. Guthrie was designated as the original capital of Oklahoma in 1907, but just a few years later—in 1910—a special election was held and voters elected to have the official state capital moved to Oklahoma City.
